Seasonal cuisine, thermal water, 600 years of history – and a wine of our own. BLUME. is one of the few hotels in Switzerland that pour a glass of wine from their own vineyard. Its name: Ammonit.
Wine belongs to BLUME. as much as thermal water
The Romans brought vine to Baden, and vineyards have been documented to exist here since 1300. Winemaking, too, is a tradition at BLUME. – the former hosts from the Borsinger family served wine from their own harvest. Today’s hoteliers, Silvio and Patrik Erne, carry that tradition forward.
Three plots on a sunny southern slope
Our Ammonit grows in Wettingen, where the Erne brothers cultivate three plots of vineyard on fine limestone soil – on the sunny southern slope of the Lägern mountain. Two grape varieties characterise our wine:
Pinot Noir (Blauburgunder): the basis of the Ammonit Blanc de Noir – a white-pressed wine with little tannin and a fine bouquet, ideal with an apéro, asparagus and poultry.
Rivaner: the limestone soil lends the golden Ammonit Rivaner a fruity note with a hint of muscat. Crisp and dry – perfect for an apéro and light starters.
A name derived from the soil
The name suits the terroir: ammonites are fossilised sea creatures, found in the limestone rock layers of the region. It is precisely this limestone soil that gives the wine its character. A wine that carries its origin in its name.
Best enjoyed at BLUME.
You won’t find our Ammonit on a supermarket shelf. It’s best enjoyed at its place of origin: over a meal in the light-filled Atrium, as a sparkling Secco during a candlelight dinner on the Gallery, or as a companion to our seasonal cuisine. A small luxury experience that only BLUME. can offer in quite this way.
Come and taste for yourself – and let us pour you a glass you’ll find nowhere else.
